One Pot Spanish Chorizo Pasta Camping Recipe

This is one of my go-to meals when it comes to camp cooking - it tastes great, it's easy to make and the entire meal is cooked in one pan making cleanup a breeze! I prefer using my Dune Induction Cooker to prepare this meal as it allows me to carefully regulate the heat without worrying about windy conditions.


Equipment:

  • Dune Induction Cooker or camping stove
  • Chopping board and knife to prepare the ingredients
  • Large fry pan or skillet
  • Stirring spoon
  • Measuring cups
  • Cheese grater

Ingredients:

One Pot Spanish Chorizo Pasta Ingredients
  • 2 tbsp extra virgin olive oil
  • 200g chopped chorizo
  • 6 garlic cloves, finely chopped
  • 1/2 onion, diced
  • 1/2 red capsicum, roughly chopped
  • 1/2 zucchini cut into half moons
  • 400g diced tomatoes
  • 2 1/2 cups vegetable stock
  • 2 cups penne pasta
  • Manchego cheese
  • Fresh parsley
  • Sea salt & black pepper

Tip: To make things even easier, prep your ingredients at home before you head away. Chop your veggies and store them in a food storage container or zip lock bag for freshness.


Steps:

One Pot Spanish Chorizo Pasta Steps
  1. Firstly, heat a large fry pan on a medium-high heat and add a drizzle of extra virgin olive oil.
  2. Once the pan is hot, add 200g of chopped Chorizo and cook for 2 minutes, flipping occasionally.
  3. Next, add 1/2 a diced onion, 1/2 a diced capsicum, 1/2 a zucchini sliced into half moons and 6 cloves of minced garlic.
  4. Let that all cook for about 5 minutes, stirring regularly so everything cooks evenly.
  5. Once those veggies have softened add 400g of diced tomatoes, 2 tbsp of finely chopped parsley and season generously with salt and pepper.
  6. Give everything a stir to combine and add 2 1/2 cups of vegetable stock and bring to the boil.
  7. Next, add 2 cups of penne pasta and give everything one last stir around.
  8. Turn the heat down to medium and leave it to simmer for 10 minutes.
  9. Once the liquid has reduced by about half, give everything one last stir, turn the heat down to low and pop the lid on to simmer for another 3-4 minutes.
  10. Finally, the perfect way to finish off a Spanish pasta dish is with some freshly grated Spanish Manchego cheese and some fresh parsley.
